    موضوع جميل ومفيد ... وللأسف يعاني الكثير من الناس هذه الايام من امراض السكر وغيرها بسبب المواد الغذائية الضارة

    لكن يبقى الرجاء بالله ثم بأصحاب العلم بأن يحاولو توعية أكبر قدر من الناس فهذه رسالة العلماء

    تقديري للأخت نرمين على المعلومات الرائعة

    وأيضا الاخ أشرف الشفقى على فكرة المشروب المفيد

    أهلا وسهلا فيك اخي أيمن مرة تانية ومشكور على المعلومات يلي عم تقدمها والله أنا كنت بتمناك تدور على الكتاب يلي قلتلك عليه لأنو هو يعتبر اول كتاب تحدث عن أخطار السكر وكافة الدراسات يلي جاءت بعده عن السكر إعتمدت عليه بشكل مباشر بس ولا يهمك وبالنسبة للكلام يلي كتبته عن التفاعلات والكيمياء الحيوية بالرغم من إنو انا موإختصاصي هل الإختصاص بس حسب معلوماتي إنو أي تفاعل كيميائي حتى يكتمل ويعطي المركبات المتوقعة من التفاعل غالبا ما يحتاج مركبات وسيطة هذه المركبات قد تكون أنزيمات وقد تكون H2O أو O2 أو قد تكون بعض المواد الاخرى والمعادن وبدون وجود هذه المركبات الوسيطة فإما أن التفاعل لايكتمل أو انه يتجه بإتجاه أخر معطيا مركبات أخرى مختلفة تماما عن المركبات المتوقعة وهذا ما يحدث أيضا بدورة كربس ومن هنا أعتقد ان كلامك صحيح في حالة وحيدة هي عندما يكون السكروز مأخوذ من مصدر طبيعي أي فواكه ومترافق مع مواد اخرى كالفيتامينات والمعادن اللازمة لإستكمال تفاعلاته وتحولاته بشكل طبيعي ضمن الجسم
    ولكن الكلام السابق لايمكن تطبيقه في حال كان السكروز صناعي ومكرر منقى من جميع الفيتامينات والمعادن الاخرى ومكوناته الحيوية الأمر الذي يؤدي لإستنزاف المعادن والمواد الموجودة في الجسم حتى يستطيع القيام بتحولاته ضمن الجسم وبما أن الكميات التي يحتاجها من هذه الوسائط غير متوفرة فهو يغير طريقه الإستقلابي ضمن الجسم يؤدي لتكوين المركبات السابقة وعلى كل بالنسبة للمقال أنا رح زودك فيه باللغة الاجنبية وبجميع المراجع المستخدمة للحصول على هذه المعلومات

    Sugar - it’s even worse than you thought!
    - and we’re not just talking about tooth decay and obesity

    When it comes to identifying the most common poison we willingly use against ourselves, an amazing feat resulting in millions of deaths worldwide every year, there really is no contest. The perpetrator is as unlikely a candidate as any you might wish to name, and its unmasking is probably all the more horrifying because this substance has burrowed its way into our civilisation like a parasite, draped in the false colours of comfort and familiarity. It has an entire industry behind it as usual, hell-bent on marketing the stuff any way it can. It’s whiter than heroin, sweeter than your fiancée, more soluble than the National Debt, and more pernicious than nicotine because, like a true demon, this little beauty comes in a million disguises and always dresses like a friend.
    Dr William Coda Martin was the first publicly to label sucrose a poison. Martin’s definition came about after he determined the classical definition of a poison was “…any substance applied to the body, which causes or may cause disease.” [1]
    Refined sugar, or sucrose, is manufactured from cane and beet extract, which has had its proteins, vitamins and minerals removed to leave a white, crystalline substance devoid of any nutritional content, only offering empty calories.
    Sugars contained in natural, whole foods are easily metabolised by the body. Nature has ensured that fructose, for instance, obtained when we consume fruits, has the necessary vitamins and minerals accompanying it to allow this type of simple monosaccharide sugar to be converted efficiently into glucose (blood sugar) and fully metabolised by our bodies for energy. Vitamins and minerals, which accompany fructose, are essential for these complete assimilation and conversion processes to occur. Sucrose on the other hand, devoid of these vital minerals, becomes a vacuous, predatory, greedy starch, which cannot metabolise completely in our bodies, resulting in the formation of toxic metabolites such as pyruvic acid and abnormal, unstable sugars containing five carbon atoms.
    These toxic by-products interfere with the respiration of cells, preventing the latter from acquiring sufficient oxygen to function correctly. These poisonous metabolites, in their free-radical or oxidation format, are constantly seeking to stabilise themselves by robbing our healthy cells of their available oxygen. This in turn degrades the cell and the cell dies.[2]
    Researcher Dr Joseph Mercola remarks:
    “Another reason to avoid sugar is to slow down the aging process. If you want to stay looking young, it is very important to limit sugar to the smallest amount possible. It is the most significant factor that accelerates aging. It is a negative fountain of youth. It does this by attaching itself to proteins in the body forming new sugar-protein substances called advanced glycation end-products (AGEs). The higher the AGE levels, the faster you are aging. As this study (by the University of Buffalo) [3] points out, sugar also increases oxidation elements in the body (free radicals) which also accelerate the aging process.” [4]
    Advanced Glycation End-Products (AGEs) are readily seen as hard yellow-brown
    compounds that are, as Dr Mercola states, the results of blood sugar bonding with proteins in the body’s tissue. This process is the precursor to degenerative disease, and may manifest itself initially as indicators associated with accelerated aging, such as premature wrinkles and grey hair.[5] We are oxidising and pre-aging our bodies towards an early death with sucrose as surely as the pick-up rusts its way to the scrap-heap if we leave it out in the yard throughout the winter. ...
    .... All refined sugars are parasitic. They have no accompanying vitamins and minerals of their own and no nutritive value. They leach valuable minerals from the body when the latter frantically attempts to do something about them.[7] Sugar can cause copper deficiency, which reduces the elasticity of veins and arteries, leading to aneurism and stroke.[8] The body must digest, detoxify and then eliminate sucrose because it cannot make cell structure from it. A body suffering a daily intake of refined sugar can go into shock if it fails to get ahead of the game and render the sucrose harmless. Typically the body combats sucrose by mobilising elements such as sodium (from salt), potassium and magnesium (from vegetables) and calcium (from our bones) to form compounds with the invading sucrose in an attempt to transmute it chemically into a form the body can either store or eliminate.
    We sophisticated westerners do not detoxify our bodies and take out the garbage, which means that the build-up of sucrose metabolites and partially detoxified sugars continues to accumulate, rendering a toxic acid siege within us.[9] The body must then, as the onslaught continues, dig deeper to marshal more minerals to rectify the acid/alkali imbalance this sugar bombardment is causing. More calcium is taken from our bones and teeth, resulting in an increased risk of osteoporosis.[10] Excess sugar is initially stored in the liver in the form of glycogen. As more sugar is stuffed into our sagging bodies daily, the liver swells like a balloon to accommodate it [11], waiting in vain for the garbage truck to take it out of the body (detoxification/elimination). The truck almost never arrives because we do not detoxify our bodies (sugar has also been linked to constipation [12] ). Finally, reaching its limit, the liver has had enough and releases the sucrose toxins it has accumulated back into the bloodstream in the form of fatty acids, which are then taken to storage bins in the inactive areas of the body, namely the belly, thighs, hips, breasts and the backs of our upper arms (triceps area).
    But still the sugar keeps a-comin’: “Another doughnut, Officer?” “Thank you, ma’am. Don’t mind if I do" Once the inactive storage areas are filled to capacity, the body begins distributing the metabolite acids into the active organs, such as the heart and kidneys. [13] These fats accumulate as rapidly as the sucrose continues to pour in, impairing the functioning of vital organs, causing hormonal imbalance[14], creating lethargy, abnormal blood pressure as the circulatory and lymph systems are invaded and depositing toxic, acidic gunk in layers on the insides of our arteries.[15] An overabundance of white cells occurs, leading to the slowing down of tissue formation. The system is nearing collapse at this point, and still the sugar keeps a-coming… “Do you want the one with extra icing, Officer?” (Naughty giggle). “Only if you insist, young lady…”
    How about the varicose veins and the rotten teeth?[16] [17] How about the kids bouncing off the walls with mineral depletion, ADD and ADHD because sucrose robs minerals, impairs brain function, resulting in increased emotional instability, crankiness, concentration difficulties, hyperactivity and violence in the classroom[18] [19], ending up no doubt with black eyes, detention, poor attention spans and poor grades… and conceivably a school shooting or two?[20]
    Glutamic acid, the key to proper brain function, is derived from a diet rich in unrefined plant dietary. Glutamic acid is broken down by B vitamins into compounds that regulate stop and go functions in the brain. B vitamins however are manufactured by symbiotic bacteria inhabiting our intestines. As the sucrose bombing continues, these bacteria are killed by the toxic sugar metabolites, resulting in a severe depletion of our B-vitamin production. This in turn impairs brain function. The results in adults can traverse the spectrum from sleepiness and inability to calculate or remember, through to dizziness[21], heightened PMS symptoms [22] and, as our lawyers have successfully argued, the occasional murderous impulses.[23]
    And so, as the human becomes the sugar equivalent of the Frankenstein monster, pancreatic function may become inhibited by excess sucrose, resulting in the impairment of enzymes such as trypsin and chymotrypsin, vital for bodily healing processes and preventing cancer growths.[24] Sugar may lead to cancer of the breast, ovaries, prostate and rectum.[25] It has been implicated in colon cancer, with an increased risk in women [26], and is a risk factor in biliary tract cancer.[27] Sugar can cause appendicitis[28], increase the risk of Crohn’s Disease and ulcerative colitis[29], and can exacerbate the symptoms of multiple sclerosis.[30] Excess sugar consumption has also been linked to Parkinson’s and Alzheimer’s Diseases.[31] Complete removal of sugar from the diet has seen stunning recoveries from cancer, diabetes and heart illnesses.

    تحياتي لك أختي نيرمين ـــــأشكرك على موضوعك المفيد جدا

    ولا أخفيكي سرا أن جميعنا يعلم مدى الضرر الناتج عن استهلاك السكر بدون تقنين اللهم أجرنا

    من الأبيضين ولكن عاداتنا في طرق صناعة وتناول المأكولات هي التي أدت بنا الى تناول

    السكر بكل شيئ حتى وصلنا الى حد الأدمان والآن نصرخ هل من مغيث

    مع أحترامى الكامل لك أختى العزيزة نرمين يجب أن نؤكد على شئ حتى لا نصيب غير المتخصصين بصدمة مثل الصدمة الكهربية,
    بنسبة كبيرة جدا تكون هذه الدراسات خاصة المتعلقة بالسموم الطبيعية فى الأغذية ابحاث صفصطائية بمعنى أنها صحيحة نعم و لكن لن يحدث منها مشاكل نتيجة لتجاهلها ما يسمى بالتفاعل بين مكونات الأغذية و بعضها و أننا لا نتغذى عليها بمفردها ,
    بمعنى اخر و للتوضيح أنه الدراسات أثبتت أن الفلفل الأسود و جوزة الطيب تسبب مرض السرطان أعاذنا الله منة و هذه حقيقة علمية و الجميع يستخدمة منذ قديم الأزل و لم نسمع عن كوارث صحية بسببة و لازال الجميع يستخدمة.
    معنى ذلك أن كلامك و أن كنت لم أراجعة كليا و توثيقك له بمراجع لا أشكك فية و لكن لن يكون الموضوع بهذا السوء لتفاعلة مع باقى مكونات الغذاء و انة ليس غذائنا الوحيد الذى نتناولة بكثرة.

    شكرا يا مهتدسة نرمين على المعلومات الرائعة و الخطيرة

    ولكن لا يمكن الاستغناء عن السكر لان السكر له دور غير التحلية حيث يقوم بحفظ بعض المواد الغذائية
    فمثلا عند صناعة المربى لا يمكن اضافة عسل بدل من السكر
    من وجة نظرى ان تناول الاشياء بشكل متوازن افضل اى الاعتدال دون الاسراف فى تناولها او الابتعاد عنها
    و شكرا لكى تقبلى مرورى............

    أهلا عزيزتي نور الإيمان شرفتي بالنسبة للسكر وإستخداماته بالصناعة أكيد من غير الممكن إستبداله بالعسل أو بأي مادة أخرى لأنه ذو دور وظيفي أكثر من دورة في التحلية وإعطاء الطعم الحلو ولكن في مقالاتي هذه أتحدث عن السكر من الناحية الصحية وأضراره على الفرد الواحد وليس من ناحية إقتصادية او صناعية وبالفعل من الصعب جدا الإستغناء بشكل كامل عن تناول السكر وخاصة إذا كان الشخص من محبي الحلويات مثلا أنا حاولت كتير إني إتوقف عن تناوله نهائيا ولكن للاسف لم أستطع ولكنني إستطعت أن أخفف من كمية الحلويات التي أتناولها جدا جدا وبالتدريج واهلا وسهلا فيكي مرة تانية

    تعلمت من فترة وجيزة عمل مشروب رائع لم أكن قد سمعت عنه من قبل بل واستغربت أشد الاستغراب عن سماعى عنه حتى قمت بتذوقه فاستطيبته للغاية ولا حاجة لإضافة السكر له ومع ذلك فإن طعمه يكون مسكر (محلو) جداً.

    قم بنزع النوى عن البلح الرطب (البلح الأسود الطرى ذا القشرة التى يتم نزعها عن أكله) وضعه فى الخلاط الكهربى وأضف إليه اللبن (الحليب). شغل الخلاط لفترة وجيزه. ها هو مشروب لذيييذ للغاية يمكنك تناوله ونسبة السكريات به مرتفعة للغاية.

    يمكن إضافة الماء إلى هذا المشروب عند خلطة للتقليل من حدة السكريات به. كما يمكن استخدام اللبن البدرة بدلاً من اللبن الطبيعى مع إضافة الماء إليه بالطبع.

    الجدير بالذكر أنك لا تنزع القشرة الخارجية السمراء للبلح الرطب عند وضعه فى الخلاط! وقد تعجبت لذلك كثيراً ولكننى عندما تذوقته وجدت طعمه غاية فى الروعة ولا بتدو به علامات ذلك القشر! لقد صنعت منه كمية بالأمس وكان لذيذ للغاية (لم أضف إليه الماء، حيث أننى أحبه شديد الحلاوة).

    وبالطبع نعلم فوائد البلح الجمة وفوائد اللبن أيضاً. إن إضافة التمر الجاف إلى اللبن الدافئ وتركة لفترة يعطى مشروباً غاية فى الروعة وتعرفه منذ مئات السنين، ولكن المشروب الذى ذكرته هنا هو شئ مختلف، فهو يستخدم اللبح الرطب (الأسود الطرى) ويستخدم الخلاط ويكون اللبن بارداً.

    فمن المعلوم أن الإعتماد على التمر والحليب فقط تعني وجبة غذائية كاملة من السكريات والدسم المنخفض والبروتينات النباتية والحيوانية.
    إذ أن الحليب أخي كما هو معلوم هو غذاء كامل من ناحية كل المكونات وما ينقصه هو فقط السكريات, وحين نكمله بحبات التمر المباركة, فإننا نكملة ونعوض نقصه من السكريات بنوع من السكر لا يمكن مضاهاته, إضافة للمكونات الأخرى في التمر, وجميعنا يحاول في رمضان لتجنب وجبات الغذاء الدسمة المضرة, الإعتماد على الحليب والتمر في البداية, ثم فيما بعد العشاء يمكنه تناول وجباته المرغوبة.
    ولكن الفكرة الجديدة في مشاركتك هي تحويله لشراب يشرب بدلا من أكله, فإنها فكرة رائعة, بارك الله بك وجزاك الله عنا كل خير.

    أن السكر الأبيض مادة جوفاء ليس فيها عناصر غذائية
    ما عدا السعرات الحرارية.

    فى الحقيقة الموضوع اكثر من رائع وكنت قد رايت العنوان من فترة ولم اهتم نظرا لغرابة العنوان فكيف يكون السكر الذى نتناوله كل يوم حمس او اكثر من المرات بالاضافة الى الحلويات .........الخ وبين انا اذكر ذلك لوالدتى فى التلفون على اساس ان اخوفها من استخدامه بكثرة لانه يسؤ حالة السكرى .فاء\ا بها تقول لى انهم اى جيلها لم نعرف هذا السكر الا من بعد العام 1967 اى بعد هجرة حرب 67 وانهم كانو يصنعون سكر من الرطب بانفسهم وذلك عن طريق وضع الرطب الناضج تماما فى اجولة مصنوعة من الالياف مثل ليف النخيل نفسه وانهم كانو يضعون صخرة كبيرة منحوت فيها مجرى منخفض تحت الجوال واخرى فوقه ويتركونها تضغط على الرطب عدة ايام حتى يسيل كل الدبس او العسل منه ويجمعونه فى قدور كبيرة ثم يوقدون النار عليه حتى يتبخر كل الماء منه ويصبح غليظ جدا ثم يتركونه لكى يجف ويتحجر ومن ثم يطحنونه اما بالتكسير فى النجر او بين سفالى الرحى ويستخدمونه فى كل حياتهم .

    أهلا بك اخي الكريم وشكرا على مرورك وهو بالفعل لو انو فينا نرجع للزمن القديم كان شي كتير منيح لأنو العادات الغذائية القديمة و المأكولات القديمة كانت افضل بكثير من الأكل المصنع والملوث بكافة انواع الكيمياويات المستخدمة حاليا وشكرا على هل المعلومة اللطيفة عن طريقة تحضير السكر
